This 2025 harvest Colombia Sidra Black Honey is back! For this new lot, we cup delicate floral, crisp and herbal notes that's rare to find in most coffees.
At Campo Hermoso farm, all the varieties of coffee start from the same point: the cherries are picked at their optimum point of maturity by means of manual selection, to go through a hydraulic selection of floats in water. At this point, each variety is taken to fermentation, which is different for each one in its fermentation process and its duration, decided by variety and what attributes Edwin wants to emphasize.
For this coffee, the cherries are harvested at over 20º brix and soaked in water for 2 hours to clean and sort. coffee cherries was under a low oxygen system by 24 hours at 18-22º C. At the campo hermoso R&D center, Cherries began a carbonic maceration for 48 hours into 2000kg tanks collecting the moss with 4.2ph/11.5 brixs. The juice (mossto) has been inoculated with a native yeast in a started culture, before cherries was pulp at black honey level macereted into 200kg reactors, the started mossto was brew in a relation 20ml/kg for 48 hours and 18ºC. The coffee was cupped and classificated and finally storage at controlled conditions 65RH -18º C media.
