Three different processes of the Taiwan Geisha from Melastoma farm
Natural, Honey, and Washed.
Our head roaster, Ben, revisited Melastoma Coffee Estate this October. Two years ago, Ben brought back “purple leaves” coffee (a natural mutation from SL34) after visiting. This time, Ben brought back Geisha from Melastoma with 3 different processes – Natural, Honey, and Washed. Melastoma Coffee Estate is located above 1,200 meters in Alishan area (the same area that produces the famous “high mountain tea”). The owner, Pao-His Huang, has a passion for Coffee. Due to the geography and weather conditions, his drying process is all done by drying machine. This year, he won several prizes in many competitions, including the Taiwan Cup of Excellence 3rd place. Based on our conversation, he is happy to share how he found the sweet spot for his honey process. Let’s taste the Geisha and dig into how he improves the processes.
